The Summer truffle, more commonly known by the name of Scorzone, because of its coarse peel, is the most common truffle. It has a delicate, pleasantly aromatic smell, vaguely reminiscent of hazel nuts or roasted barley malt, and a mild flavour.
INGREDIENTS
Summer truffles (Tuber Aestivum Vitt.), water, salt.
SUGGESTIONS ON HOW TO USE IT
Summer truffles can be used as a condiment for pasta dishes or to add to cooking meat, or else with a good olive oil to prepare savoury tartlets or toasted garlic bread. Best before 4 years. The 100 grams jar is best for eight portions.
